In researching information for this blog post, I read seven documents regarding ‘good things that came out of COVID-19’ written by individuals and groups. There are many opinions and facts. I’m adding to the facts.
For me, some personal good things to come from COVID-19 include more outdoor time riding my bike, taking long walks, reading more, and most recently, restarting my enjoyment of running. The most notable good thing is my cooking ability. I always made dinners for my family when our kids were growing up, but nothing to brag about. I made healthy and substantial meals to nourish not impress. Now, I’m researching recipes, methods to cut, chop, and sauté and ingredients.
Last night I made a pot roast in our Insta-pot (another COVID-19 good thing), and it was utterly outstanding. I’m giddy with delight to prepare, serve, and eat my meals.

I’m definitely a ‘ find the silver lining’ kind of person and this new cooking pattern is glittering! ✨
